The traditional seitan is made through the time honored fashion of extracting the protein from unbleached, enriched. locally milled, wheat flour. Our marinade and cooking liquid gives the seitan it's color and flavor. This style can be purchased wholesale as cutlets(about 4 ounces per cutlet) in 5 pound bags or as 3 pound logs. Sliced thinly our seitan is great cold in sandwiches, hot as a cheesesteak vegetarian(or vegan) alternative, and can be grilled.
We also make seitan using vital wheat gluten(not from China). The Savvy Stir-Ins a ground sausage like meat alternative comes in Mexican Style(like Chorizo), Italian Style, and can be specially ordered in Shitake Mushroom and Herb. Stir-Ins can be used in lasagne, pasta sauces, burritos, egg dishes, hot sandwiches, stuffing vegetables and endless other places ground meat goes in recipes.
